South Tyrol, our home, provides the basis for our dishes. We get our inspiration and flavours from around the world. Grounded South Tyrolean ingredients meet the refined flavours of Italy and the rest of the world.
You can taste it in every bite – South-Tyrolean roots and our openness to the world. In the summer, we harvest our herbs directly from the upland moor behind our house and from our garden, where ribgrass, dandelions, chickweed and much more vegetation flourish. A visit to the Unteregger cheesery provides inspiration just as a freshly picked tomato from our garden. Delicious moments that are not soon forgotten.
