Everything we cook for you has its origins in our home country of South Tyrol. We always make every effort to bring out the natural taste of fine fresh ingredients. Why? Because nature knows what is best for you.
We get our inspiration and aromas from all over the world. But this must be good, sustainable and fair. Our regional cuisine should make you close your eyes with pleasure, tickle your nostrils and motivate you to enjoy the beauty of life. We take great care that the ingredients we use in our gourmet cooking grow in nature without artificial substances and that our suppliers practice social equity in their companies.
Especially in the summer we pick many of the ingredients for our South Tyrolean cuisine from the upland moor behind our hotel: watercress, lady’s mantle, yarrow, ribwort; forest berries, potatoes. Many vegetables we get from our uncle’s farm in Pustertal. The apples we get from friends on the apple-growing plain in Natz and we press the apple juice ourselves for the breakfast buffet. We get Alpine butter and cheese from the Fanealm, and we buy the milk from our Alpine farmers at the South Tyrol Brimi Dairy.
Our kitchen has space for many ingredients from South Tyrol. If you want to taste the taste of South Tyrol and at the same time to be environmental-friendly, try out our regional dishes, which are prepared with regional and fresh ingredients.
Yes, in our cooking we are also inspired by the secrets of wellbeing of South East Asia. Try our stuffed pasta pouches reminiscent of dim sums, South Tyrol spring rolls or cheese noodle sushi.
Our pastry chef deserves extra icing on the cake, for the idea of a dessert oven!
Every afternoon you can try out tasty delicacies, perhaps take the desserts also for a spur-of-the-moment poolside picnic.
Once a week we serve you five courses from the recipe books of our grandmothers. The first course and dessert are served on sharing plates. Stuffed pasta (mezzalune), apricot dumplings and shredded pancakes make everyone happy!
