For all of us at the SILENA, the soul of the house is the 350 year old farmhoouse room "Stube". There is history in every wooden beam, and every notch in the woodwork tells a life story that happened here over the centuries. Even though we today enjoy far bigger comforts, our hearts open up the most of all, when sitting around the traditional tiled stove and talking about all the things that are on our minds. In the "Stube", we serve you many dishes which mean so much to us: many South Tyrol specialities, just as our ancestors used to make them.
In the restaurant menu of our farmhouse room "Stube", you can follow traces of history through 4 stages. We serve classic dishes which represent features of our culinary heritage for centuries. For example, the South Tyrol speciality "Jause" with wholegrain flat bread, ham, mountain cheese from the valley, local butter, smoked sausage and horseradish, which are served on a wooden board. Or try the Vals speciality Cheese Dumpling Soup. We serve the traditional dish "Bauernbratl" from our Grandma Irene's recipe book: a dish of pork ribs with potatoes and carrots, cooked together and served in a roasting pan.
For a sweet dessert we serve you "Mingilan" our local sort of donuts. We love to dip them in our mulled wine and enjoy them right away! Did you know that in South Tyrol we have almost as many donut sorts as we have valleys? Practically every mountain valley has its own donut speciality, cooked and served for centuries in the farmhouses.
